How to make this recipe

Ingredients

Serves 2

2 fillets of smoked mackerel
150g beetroot cooked and diced
2 large handfuls of baby spinach
50g almonds
1 apple core removed
2 tbsp. horseradish sauce
50ml water
50g pumpkin seeds

Mackerel is rich in omega 3 oils which provide a range of essential oils to boost health. 

The beetroot and apple are both high in anti-oxidants which boost the immune system.

Directions

Grill the mackerel until the skin is crispy and the mackerel fillets are warmed through. Now into a bowl and mix with the spinach, beetroot, almonds and sunflower seeds. Slice the apple and toss into the salad.

Now mix the horseradish and water together and pour over the salad and mix gently.

Divide between 2 serving plates and serve.
