How to make this recipe

Ingredients

Serves 2

3 chicken breasts skin removed
1 tbsp. olive oil
1 pinch ground cinnamon
1 pinch of ground cumin
1 pinch of ground coriander
1 tsp honey
Juice and zest of 1 lime
1 tbsp. finely chopped coriander leaves

Chicken is a great source of lean protein which is ideal for fat burning regimes. 

The spices contain anti-oxidants which help the immune system and promote good health.  The meal can be served with a wrap or cous cous which will provide energy around training sessions. You could leave out the cous cous or wrap if the carbohydrate content of the meal needs to be reduced.

Directions

Cut the chicken breasts into 12 equal pieces and place into a large bowl. Add the remaining ingredients to the bowl and mix well. Cover the bowl and leave to marinade in the fridge for 1 hour.

Remove the chicken from the fridge and place 3 pieces of chicken on to each of the 4 kebab sticks.

Now heat a griddle pan over a high heat and place the kebabs onto the pan. Cook the kebabs until golden all over and place into an oven at 180 degrees for 5-6 minutes. Once cooked serve immediately.

Directions

The chicken kebabs go with this cous cous perfectly.

100g couscous cooked
25g almonds toasted
25g sultanas
8 dried apricots roughly chopped
1 tbsp. coriander finely chopped

Simply combine all of the ingredients together and serve with pomegranate seeds and Greek yoghurt.
