Sprinters need to be strong and explosive so it is important to build muscle to support the physiological demands of the sport.
The eggs are a good source of protein which helps support muscle growth. The rye bread provides carbohydrate for energy. Avocados deliver essential oils. The dish is quick and easily prepared and can be eaten at any time of day, so fits in around training regimes.

Ingredients
Serves 2
2 slices of dark rye bread
1 ripe avocado, peeled, stone removed and sliced
8 eggs
1 pinch of salt and pepper
Smoked salmon – optional
Directions
Toast the rye bread.
In a bowl crack the eggs, add a pinch of salt and pepper and whisk.
Place the eggs into a non-stick saucepan and cook over a low heat until scrambled but still creamy.
Divide the avocado between the toast and spoon the scrambled eggs over the top.
If using, arrange smoked salmon on top of the eggs.
